My mom gave it to me nearly a year after I'd been hospitalized a few times for a sudden battle with dysautonomia, Ehlers Danlos Syndrome (mainly vascular), and GI issues that are currently trying to be solved. A little late to try to care but the title of the book made me immediately know she was worried I'd inherited her celiac disease and just wasn't showing antibodies. Within the book there are recipes, scientific explanation as to why you feel the way you do, good dietary and supplement explanations, the best part is his list of chemical/FDA names for things that contain grains that may be found on the ingredient lists to help you stay away from them during you road to recovery. Bread is not suddenly bad for us. Although I would say that pesticides, molds, GMO, and farming practices of today are not in general very healthy for us. Gluten sensitivity was recognized in pre biblical times. Have you read No Grain No Pain? I discuss this and the history of grain quite thoroughly.

I have been searching for years for the reason that my celiac disease can not get under control. On Jan 20 i opened a newsletter from Dr Osborne and read it and bought this book. I read it that night, the entire time saying YES This is Me ...Yes i have that. I decided the next day to go for it and change my life eating habits. IT was not much of a change since i was already most of the way there. Then we also have food as a whole. Yeah, food provides micro-nutrients but some people are allergic to the food that they eat and the foods they’re eating are creating an inflammatory response that’s leading to chronic inflammation and pain. Probably the most well-studied and the most well-talked about to date is gluten. Gluten sensitivity is being a trigger for autoimmune pain. Why removing all grains (and often certain other foods) can eliminate chronic pain once and for all What the food industry won’t tell you is that gluten is found in more forms than the commercial “wheat”. Basically anything that is a grain - is gluten! Yes, even coffee. :( I think the glycemic index or the glycemic part is really important too. The patients I see, some of their diet is upwards of seventy-five percent grain basically. Maybe there’s some protein thrown in there.
